Unlike designations of origin, PGIs offer a broader regulatory framework. This breadth does not imply lower standards, but rather greater scope for interpretation. It allows winemakers to work with a more diverse range of varieties, explore less conventional blends, and adapt winemaking decisions to what each harvest has to offer.

But the agricultural memory was never completely erased. At the end of the last century, a determined and passionate recovery process began. Native grapes were replanted, facilities were modernized, and a commitment was made to higher quality viticulture. Callet brings freshness and elegance. For years it was considered secondary, but today we better understand its ability to offer balanced, food-friendly wines. Its delicate aromas and natural acidity make it a perfect ally for blends that seek finesse rather than power.

  • Giró Ros

Among the whites, Giró Ros represents the island’s luminosity. Its wines display stone fruit, tropical nuances, and an enveloping sensation balanced by freshness. It is a variety that has returned to remind us that Mallorca can also express itself in whites with great personality.

  • Other recovered varieties

Gorgollassa and Moll are also part of this varietal heritage protected by the PGI. Each brings a different nuance to the whole, broadening the range of styles and demonstrating that diversity is a source of wealth.
