What exactly is rosé wine?
Rosé wine is made from red grapes. However, unlike reds, the contact of the must with the skins (the grape skins) is brief, allowing only part of the colour and very little tannin to be extracted. This process can last from a few hours to a maximum of two days, depending on the style sought.
After maceration, the must is separated from the skins and fermented like a white wine. The result is a fresh, aromatic wine with a very attractive profile for those looking for light options with personality.
Differences between rosé, red and white wine
- Rosé: it is made with red grapes and a short maceration. It has less body than a red, but more structure than a white.
- Red: fermented with the skins for a longer period of time, which provides more colour, tannins and complexity.
- White: made from white grapes or red grapes without skins, resulting in light, floral or citric wines.
Why choose rosé wine in spring?

Rosé wine is an excellent choice for the warm or hot months because it is consumed very cold, it is light, refreshing and very versatile when it comes to accompanying meals. Moreover, it usually has a moderate alcohol content, which makes it an easy drink to enjoy at any time of the day.

The rosé wines of Bodega Sa Cabana
In our winery we make two single-varietal rosés, both from 2023 vintages and from vineyards that are about 20 years old. The grapes are harvested by hand and the grapes are kept cold before being processed. Both wines are fermented in stainless steel tanks to preserve the primary aromas and the natural freshness of the fruit.
Merlot Rosé
- Colour: light, bright pink
- Aromas: fresh strawberry and sweet notes reminiscent of caramel
- Palate: light, fresh, friendly, with good acidity
- Style: elegant and easy to drink, ideal for starters, cold dishes and Mediterranean cuisine
Cabernet Sauvignon Rosé
- Colour: onion skin, with salmon highlights
- Aromas: ripe fruit such as melon and watermelon
- Mouth: smooth attack, with marked acidity, persistent and expressive
- Style: more structured, perfect for spicy dishes, rice dishes and seafood
