The vineyard’s triumph in the face of a harsh climate
This year’s weather conditions have once again put the patience and observational skills of our vineyard to the test. We have faced a season dominated by intense heatwaves and sustained high temperatures, but the truly demanding challenge has been the behaviour of the nights. As the usual drop in temperature during the early hours has not occurred, the vines are suffering a level of stress that has forced us to bring forward the harvest schedule.
This climatic phenomenon results in smaller grapes, but with a truly remarkable concentration of aromas and flavour. The logistical efficiency of having the facilities integrated within the estate itself means that the freshly harvested grapes can begin processing within minutes, preserving all their organoleptic qualities intact.
Added to this is the careful fieldwork which we carry out during the harvest. We conduct a rigorous manual selection of the bunches, removing any surplus grapes to retain only those of the very highest quality. This meticulous sorting at the vine ensures that only impeccable raw materials enter the winery.

The farm’s development: from the early stages to agricultural maturity
To understand the standard we achieved with the 2026 vintage at Sa Cabana, it is worth recalling the estate’s history.
Originally, like many other traditional estates on the island, Sa Cabana was home to a mixed crop system: orange and lemon trees predominated, alongside olive, almond and carob trees, as well as cereal crops. The The Codolá Bonet family, who owned the estate, had also set up a small dairy farm there, reflecting the close bond with the land that had always characterised their family for generations.
Over time, driven by their distinctive entrepreneurial spirit and also in response to the changes brought about by the arrival of large groups in the sector, they decided to diversify their activity into new areas, while maintaining their agricultural tradition and hospitality as their core values.
At Sa Cabana, this same drive led to a process of agricultural conversion, led by Doña Francisca, which gradually transformed the landscape: the old trees gave way to the vineyards that today define the essence of the estate.
The exceptional quality of our grapes led us to start making wine. The results exceeded our expectations. We decided to take a more professional approach and bring leading experts from the wine industry onto our team.
The early years at the vineyard were marked by significant initial difficulties. The plots had been neglected for some time, and the indiscriminate use of machinery during the grape harvest caused the vines to suffer severe damage and even to burst during the harvest. These circumstances made it necessary at the time to restructure the land and to discontinue certain varieties that were unsuited to the environment, such as the cabernet.
Over the years, the management model has undergone a complete shift towards meticulousness and conservation:
- Soil management: We analyse and nourish the soil in a balanced way to promote microbial life.
- Foliage management: We manage the canopy structure to protect the grapes from direct sunlight.
- Precision irrigation: We monitor water usage with surgical precision to mitigate high temperatures.
- Harmony with the landscape: The constant care taken is reflected in a beautiful estate, in excellent condition and in perfect harmony with Mallorca’s natural surroundings.

The value of being a family-run winery compared to the large-scale wine industry
On Mallorca’s ever-changing wine map, where the range of options on offer is constantly growing, at Sa Cabana we proudly reaffirm our identity. There is a clear distinction between the scale of a large wine industry and the purpose of a family-run winery specialising in high-end creations. Our philosophy is not geared towards high production volumes, but rather towards the creation of signature pieces.
For this reason, we follow a policy of low yields in the vineyard, keeping production at around 4,000 kilos per hectare. By limiting the number of bottles, we ensure that the vine’s resources are concentrated to the full, resulting in wines of superior complexity and elegance.
We are aware that today’s market has become much more demanding. Wine lovers are no longer satisfied with run-of-the-mill, second-rate wines; instead, they seek authentic, distinguished wines that offer impeccable value for money. Producing wine on the island entails higher costs — in terms of land, inputs, vegetation and the logistics of transport from the mainland — but the proximity of our vineyards to the area of the winemaking process enables us to streamline our workflows and optimise resources without compromising on quality in the slightest.
The resurgence of indigenous grape varieties on the wine map
Consumption trends in the world of wine go through distinct cycles. Recently, there has been a slight decline in demand for red wines, whilst demand for white and rosé wines has grown significantly. At the same time, consumers are seeking to connect with the history and origins of each region, pushing wines from other countries into the background and sparking a deep interest in the native varieties from our region.
Grapes such as Giró Ros or Mantonegro They have a unique historical heritage, having been linked to the Mediterranean since the time of the ancient Phoenicians. Although they were long regarded as ‘table wines’, today they are the focus of sophisticated winemaking processes that demonstrate their enormous potential.
On our estate, the performance of the local grape varieties is yielding exceptional results:
- Giró Ros: This white grape has become a real gem at Sa Cabana, producing wines of extraordinary finesse.
- Mantonegro: Essential for bringing out the character, freshness and expressiveness that are so characteristic of the island.
- Callet: A noble Mediterranean variety that is perfectly suited to our demanding cultivation system.

Technical precision and human purpose: the creation of Brincaolas rosé wine
Wine-making Rosé wine presents one of the most complex challenges within the winery. Achieving the desired hue requires patience, finesse and absolute control over the temperature.
To bring our Brincaolas rosé to life, we carry out a very gentle extraction of the must just before it takes on the colour from the skins. This results in a natural, subtle, bright and immensely elegant hue. From that point onwards, the must is transferred to fermentation and treated with the same care as a top-quality white wine, where rigorous temperature control is the cornerstone for safeguarding the aromatic purity of the fruit.
This wine is produced in collaboration with the Nemo Foundation, highlighting the tremendous effort the children in the association put into overcoming life’s difficulties with great perseverance and commitment – just as this very special wine is crafted.
