Sa Cabana: a family winery in Mallorca that revives the winemaking tradition

In Binissalem, at the foot of the Sierra de Tramuntana mountains, declared a World Heritage Site by UNESCO, is Bodega Sa Cabana, a winemaking project by the Codolá Bonet family that combines the tradition of the old Mallorcan cellars with oenological innovation.

We believe that every wine tells a story and, in our case, that story speaks of the richness of our beloved island and the dedication of a family committed to reviving and promoting its winemaking tradition. In this article, we tell you all about our origins.

From farm to vineyard

Originally, like many other traditional farms on the island, Sa Cabana was home to a variety of crops: mainly orange and lemon trees, accompanied by olive, almond and carob trees and cereal crops. The Codolá Bonet family, who owned the farm, had also developed a small dairy farm there, reflecting the close connection to the land that had always characterised their generations.

Over time, driven by their distinctive entrepreneurial spirit and also in response to the changes brought about by the arrival of large groups in the sector, they decided to diversify their activity into new areas, while maintaining their agricultural tradition and hospitality as their core values.

At Sa Cabana, this same drive led to a process of agricultural conversion, led by Doña Francisca, which gradually transformed the landscape: the old trees gave way to the vineyards that today define the essence of the estate.

The exceptional quality of our grapes led us to produce wine.. The results exceeded our expectations. We decided to professionalise and incorporate leading technicians from the wine sector into our team.

The vineyard: local varieties and sustainability

The Sa Cabana vineyard covers more than 14 hectares. We planted the first vines in 2002.. At that time, we chose traditional French varieties, including Cabernet Sauvignon, Merlot and Syrah for red wines, and Chardonnay for white wines.

However, over time we realised the importance of focusing on local identity and sustainability, so we launched a project to gradually convert to native varieties. . We began with experimental micro-vinifications to evaluate the oenological behaviour of each grape and discover the varietal characteristics they bring to the wines we aspire to produce in the future.

Among these initiatives, we highlight our new Giró Ros plantation and our work with Callet, both traditional Mallorcan varieties, white and red respectively. In the latter case, we carried out field work that allowed us to select a particularly interesting clone, with a unique quality and profile, which has become our promise for the wines we plan to produce in the coming years.

We also continue to focus on Manto Negro and Escursac, native varieties that reinforce our commitment to the island’s wine-growing identity.

Cultivation philosophy: respect and attention to detail

We carry out our work in the vineyard with absolute respect for the environment. . With the clear objective of minimising environmental impact and preserving the biodiversity of the estate, we use ecological methods for our treatments, employing only the essential systemic products.

Little by little, we have managed to adapt all our crops perfectly to the soil and bioclimatic conditions of Mallorca.

We carry out all our work with attention to detail.. At Sa Cabana, we prioritise grape quality over excessive production, while researching new techniques and processes to optimise production, integrating traditional experience with technological advances that enhance the quality of our wines.

This philosophy, which is so characteristic of us, permeates everything we do: we choose to produce single-varietal wines, designed to express the typical characteristics and purity of each variety, without resorting to blends that could dilute their character.

Love for the land and passion for wine

For us, Sa Cabana represents much more than a vineyard: it is the recovery of a legacy that once united so many Mallorcan families, when almost every house had its own cellar.

On this estate, we wanted to pay tribute to that heritage, cultivating vines with the same respect and dedication as our ancestors, and bringing the spirit that guides us to every glass: love for the land and passion for wine.
