In 2026, here at Sa Cabana we have taken a huge and decisive step forward, one we have been working towards for a long time. Today, that effort has come to fruition in the form of an unforgettable milestone as we celebrate the first bottling at our new winery on the estate, set against the unrivalled backdrop of our vineyards in bloom.

For years, the winemaking process and subsequent bottling took place at a winery located off our estate. Although this is not the first time we have bottled wine, it is the first time that this crucial stage has taken place entirely on our estate. Today, the estate is no longer just the place where the grapes are grown; it is now everything.

Bottling as a key process in wine production

Bottling is not merely a logistical step or a final packaging stage. In winemaking, it is regarded as a key stage in the production process, as it marks the transition whereby the wine leaves the protection of the vats or barrels and is transferred to the glass container in which its development will be completed.

During this phase, key aspects are monitored to ensure that the qualities achieved during wine production are maintained to the highest standard:

  1. Protection against oxidation: When the wine is decanted into the bottle and the cork is inserted, direct exposure to the air is cut off, preserving the aromas and the freshness of the fruit.
  2. Stabilisation during ageing: After bottling, the wine enters a period of rest during which its components finish blending harmoniously.

The shift from outsourcing production to centralising every stage on our estate marks the start of an exciting new era in which we feel closer than ever to our land.

From the heart of Binissalem, we continue to write our story and that of Mallorcan wine. We retain the same passion as ever, but with the satisfaction of knowing that the life cycle of every bottle now unfolds under the same sky and on the same soil that nourishes our vines:

  • A single source: The grapes do not need to be transported after harvest, ensuring that their natural properties remain intact by the time they reach the winery.
  • The ultimate home: We keep our feet firmly on the ground, blending the vineyard landscape of Mallorca with our daily work in the winery.
  • Respect and innovation: We innovate in our processes whilst honouring tradition, combining our accumulated knowledge with an unwavering commitment to loving the land and respecting nature.

Having the winery integrated into the estate also transforms the way our team works. The immediate proximity between the rows of vines and the winemaking area allows decisions to be made with a fluidity that was not possible before.
